Spaghetti from a food truck? New operation noodling into Western Pa.

PITTSBURGH — Think of your Italian grandma’s kitchen on wheels serving up all manner of classic pasta dishes. Peter Williams and the Revival Pasta food truck will soon be hitting the road.

Williams is the manager of the Wilkinsburg-based Revival Chili food truck. He told our partners at TribLive.com he spent time during the COVID-19 quarantine refining various types of traditional sauces. He said he started with classic red sauce before branching off into grilled chicken with artichoke and pistachio, beef Bolognese, and mint with forest mushroom.

His sauces will be served over fresh pasta from the Pennsylvania Macaroni Co., including spaghetti, fettuccine, lemon pepper linguine and tomato basil linguine.

Williams’ converted trolley food truck takes to the road next week with stops in Apollo, Upper St. Clair, Highland Park, Vandergrift and Hampton.
