MOUNT OLIVER, Pa. — Joe Calloway, CEO and founder of RE360 in Allentown, makes clear that it was never part of the plan for his new M.O.B. Restaurant + Wine Shop to drop its marquee-name chef within not much more than a month of its opening.

“It wasn’t supposed to be a short-term thing,” said Calloway in the wake of the news that Kevin Sousa and his wife Megan had been dropped from leading the new Mount Oliver restaurant.
