PITTSBURGH — Seeing a makeshift C and R hung up next to Apteka’s signage, a bystander may think that its a prank — but it’s intentional.
Crapteka is a three-weekend limited run that the acclaimed vegan restaurant does annually, swapping its Central and Eastern European menu for takes on American cuisine. For the past eight years, pierogies and kluski are replaced by beet burgers and fries. But despite calling it “crap,” chef Kate Lasky said that the food is anything but.
“It’s just a tongue in cheek thing but we still do everything from scratch,” Lasky said. “We make the buns, we punch all our own fries, we make all the mayos from scratch out of sunflower oil and flack. The prep for it is more manageable that our regular service, which, we’re a very prep-intensive restaurant, but it’s still kind of all nice.”
The event started as a pop-up promotion when Lasky and partner Tomasz Skowronski went on vacation during the slower season.
